Victoria Sandwich Cake






The Victoria sponge ,also known as the Victoria sandwich or Victorian cake is named after Queen Victoria.
A typical Victoria sponge consists of raspberry jam and whipped double cream or vanilla cream.
The traditional method is creaming caster sugar with butter , mixing thoroughly with beaten egg, then folding flour and raising agent into the mixture.
These days ,an electric mixer or food processor is used in whisking all the ingredients together until creamy.




  Ingredients

3 fresh eggs
200 g caster sugar
200 g butter
200 g self raising flour
1 teaspoon vanilla extract
1 teaspoon baking powder
2 tablespoon of Baileys Irish cream



Method

Sieve the flour and baking powder in a big bowl, then add eggs,sugar ,butter , vanilla extract and baileys Irish cream.
whisk until smooth and then divide into 18 cm or 20 cm tins.

bake at 160 degree centigrade for 30 mins until golden brown.





Allow to cool before adding your favorite icing, for this cake  I added hazelnut filling and buttercream icing and finally sprinkled some marshmallows on top.
