Madeleine is a type of sponge cake that originated from Commercy and Liverdun (in the Lorraine region of northeastern France) . The main ingredients are flour,eggs, almonds or other nuts. All you need to make them are the ingredients and a shell shaped baking pan.
I absolutely love them, they are so easy to make and you can tweak the recipe to your taste by adding zest .One can never go wrong with Madeleine, they are my favourite.
My Method
Ingredients
Flour
Butter
Vanilla Extract
Lemon Zest ( I prefer tangerine , clementine or orange Zest)
Salt
Sugar
Eggs (2) depending on the quantity you are making.
I basically mix all the dry ingredients together (flour,sugar and Salt).
I then add my zest to the broken eggs and whisk for one minute or so , add the vanilla extract,
then I pour in the dry ingredients(flour,sugar and salt).
I add my butter last, melted in the microwave for a few seconds. Mix everything together and the batter is ready.
You can use a pipping bag and then put them in the Madeleine tray to bake in the oven for 15 to 20 minutes until they are golden brown.
Once they are ready, bring them out to cool on a rack.
Enjoy with tea , ice cream or whatever you fancy.
